Chewy Red Raspberry Bar

What you need:
  • Non-stick cooking spray
  • 1/2 cup of butter or margarine
  • 1 cup firmly packed brown sugar
  • 1/2 teaspoon almond extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 cup rolled oats
  • 1/2 cup red raspberry preserves

What you do:

  1. Pre-heat the oven to 350 degrees Fahrenheit.
  2. Spray an 8x8 inch baking pan with non-stick spray.
  3. Beat butter and brown sugar in medium bowl until smooth and fluffy.
  4. Beat in almond extract. Mix in flour, baking powder, and oats until mixture is crumbly.
  5. Save 1/2 cup of mixture for topping. Press remaining mixture into bottom of prepared pan.
  6. Spoon raspberry preserves evenly over crumb crust in pan.
  7. Sprinkle with saved crumb topping.
  8. Bake for 30-40 minutes or until lightly browned.
  9. Cool on wire rack. Cut into bars.
