Devilled Eggs

- 8 eggs, hard-boiled
- 3 tbsp mayonnaise
- 1 tsp mustard
- 1/2 tsp curry powder
- 1 pinch salt
- Dash of pepper
- Garnish (cilantro or parsley)
- Egg platter
What you do:
- Cut each of the boiled eggs in half and remove the yolk.
- Arrange the egg whites in the egg platter.
- Mash the yolks in a bowl with a fork until smooth and then add the dry spices and mix thoroughly.
- Add the mayonnaise and mustard and mix everything until well combined.
- Use two spoons (one spoon to scoop the filling, the other to push the filling into the egg) to fill each of the egg whites and then garnish with cilantro leaves or parsley.
- Refrigerate for an hour before serving.
Some paprika sprinkled on top adds great color to these delicious eggs!
