Inukshuk Cake

- Three round cakes of varying sizes - small, medium, and large
- White icing
- Red icing
- Green icing
- Brown (chocolate) icing
- Shredded sweetened coconut
- Chocolate bar halves or mini chocolate bars (those that look like tree stumps work best)
- Gum paste or marzipan
- Round peppermints
What you do:
- Assemble the cakes on top of each other - largest at the base, then medium, then smallest on top. Frost the stack of cakes with the white icing. This is Inukshuk's mountain. Sprinkle coconut overtop of the mountain and add the chocolate bar halves for trees. Stick three round peppermints together and add brown eyes and a smile. These are snowmen - stick them all over the mountain! Shape your gum paste or marzipan into so it looks like Inukshuk, sitting on the mountain. Cover the gum paste or marzipan with a layer of white icing. Add a nose, eyes, hat and gloves. Draw a round red sled on the top of the mountain in red icing, and put Inukshuk on top. He's ready for a totally sweet ride!
- Helpful Hints: Remember that marzipan is almond paste, so if allergies are a concern, try to find gum paste.
This cake tastes as great as it looks!
