Pinky's Fluffy Puffy Marshmallows

- 1 cup cold water
- 3 tablespoons unflavored gelatin
- 2 cups sugar
- 3/4 cup light corn syrup
- 1/4 teaspoon salt
- 1 1/2 teaspoons vanilla extract
- Pink food coloring
- Powdered sugar (for coating the marshmallows)
- Cooking spray (or butter or margarine)
- Electric mixer
- 9x13 pan, lined with foil
What you do:
- Line a 9x13 pan with foil and grease with cooking spray.
- Place 1/2 cup cold water in a large bowl. Sprinkle the gelatin over the surface of the water and set aside.
- Place the sugar, corn syrup, salt and 1/2 cup water in a heavy pan and place over high heat. Cook the mixture until it reaches 240 degrees (use a candy thermometer).
- With the electric mixer set on Low, add the hot sugar mixture and food coloring. Turn up to High and beat for 10 minutes or until the mixture is fluffy and lukewarm.
- Pour the slightly warm and thick marshmallow mixture into the prepared pan and let cool at room temperature for a few hours.
- Sprinkle a cutting board with powdered sugar and turn out the marshmallows. Cut or shape as desired.
These will make a sweet Valentine's treat!
