Smilin' Oatmeal Cookies

- For the recipe:
- 1/2 cup butter, softened
- 1/2 cup brown sugar
- 1/2 cup white sugar
- 1 egg
- 1/2 tsp vanilla
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp cinnamon
- 1 cup flour
- 1 cup quick rolled oats
- Raisins or chocolate chips (optional)
- Cookie sheet For the icing:
- 1 cup powdered sugar
- 2 tbsp water (adjust if you need more)
- Red food coloring
- Black or brown food coloring
What you do:
- Cream the butter and add the brown and white sugars.
- Add the vanilla and egg and beat well.
- Add the baking soda, baking powder, cinnamon and flour slowly.
- Add the quick rolled oats.
- When everything is well-combined, you can either add raisins or chocolate chips or simply leave them plain!
- Drop medium-sized cookies 2 inches apart on a lightly greased cookie sheet.
- Bake at 350 degrees Fahrenheit for 10 minutes or until the top and sides are golden brown.
- For the icing, simply mix together the powdered sugar and water. Divide it into three parts - add red food coloring to one part, black food coloring to another part and leave the rest white.
- With an icing bag, pipe on two large white dots as eyeballs, a red line as a mouth and two black dots on the larger white eyeballs.
Serve these yummy cookies with a glass of milk!
