Cheddar Cheese Veggie Quesadillas

What you need:
(Makes two quesadillas)
  • 4, 12-inch flour tortillas 
  • 3 cups shredded cheddar/Monterey jack cheese blend 
  • 2 cups whole kernel corn, drained 
  • 2 cups diced red bell pepper
  • 3 cups black beans, drained 
  • 4 chopped green onions 
  • Guacamole, salsa or sour cream to serve with it 
  • Oil 
  • Large frying pan/skillet
  • Plate

What you do:

  1. Prepare the large oiled skillet over medium low heat. 
  2. Place the tortilla in the skillet and flip it once to ensure an even coating of oil on both sides. Remove it and put it aside. Place another tortilla in the skillet and flip it once. 
  3. Allow the tortilla to heat on one side for about one minute. 
  4. Beginning at the center of the tortilla, evenly spread the cheese blend until the entire surface is covered. 
  5. Top the cheese with the corn, bell pepper, black beans and green onion. 
  6. When the cheese is completely melted, add the other tortilla on top and flip it in the pan. 
  7. Let the tortilla warm for a moment and then remove the quesadilla from the pan and put it onto a plate. Cut it into wedges and enjoy! 
  8. Repeat the above for the second quesadilla.
 
 
These are even better with grilled vegetables!
